Summer Squash Casserole



Summer Squash Casserole

Ingredients :
- 2 lbs zucchini OR yellow squash (about 6 cups sliced in all) -
- 1/4 c chopped onion -
- Salt to taste, optional -
- 1 can (10-3/4 oz) condensed cream of chicken soup -
- 1 c dairy sour cream -
- 1 c shredded carrots -
- 1 package (8 oz) herb seasoned stuffing mix -
- 1/2 c melted butter or margerine -

How to Prepare :
1. Heat oven to 350 degrees. Combine squash (or zucchini) and onion in a large sauce pan. Cover with water (not too much) and season with salt if desired. Cook for 5 minutes and then drain.
2. Combine soup and sour cream in a large bowel. Stir in the carrots. Fold in squash and onions. Then combine the stuffing mix and butter.
3. Spread half of the mixture into the bottom of a 12x7-1/2x1/2 inch baking dish. Spoon in vegetable mixture, sprinkle with remaining stuffine and bake for 30 minutes or until heated thoroughly.
