Chicken in Butter Sauce
Ingredients :
- 2-1/2 lb skinless and boneless chicken pieces -
- 1 t salt -
- 1 lemon -
- 16 oz plain yoghurt -
- 1 medium onion, peeled and quartered -
- 1 clove garlic, peeled and roughly sliced -
- 1 inch cube of fresh ginger, peeled and quartered -
- 1 fresh hot green chili, roughly shredded -
- 2 t garam masala -
- 3 T liquid yellow food coloring, mixed with 1/2 T red food coloring (to give a rich orange color and is optional) -
How to Prepare :
1. Cut the chicken into small pieces and make slits to allow the spices to penetrate. Rub salt and lemon juice, set aside for 20 minutes.
2. Combine the rest of the ingredients in a blender and process on high to get a smooth paste. Pass through a sieve and add to the chicken. Mix well and leave for 6-24 hrs in the refrigerator.
3.The next day, heat the oven to its maximum temperature and shake off as much of the marinade as possible, arranging the chicken pieces in a single layer on a baking tray.
Bake for 20-25 minutes or until done; do not over cook.
